Ricotta apricot truffles

Ingredients
1/4 cup toasted desiccated coconut
1/4 cup oatbran
1 1/2 tablespoons Milo
250g Australian reduced fat ricotta
2 tablespoons icing sugar
1/2 cup chopped dried apricots
1 teaspoon vanilla extract
Method
1.
Combine coconut, oatbran and Milo.
2.
Mix half coconut mixture, ricotta, icing sugar, apricots and vanilla in a large bowl until well combined.
3.
Using clean hands, roll tablespoonfuls of ricotta mixture into balls and coat in remaining coconut mixture. Chill for 30 minutes before serving.
